Twelve Gifts of Handmade Part Five or Celebrate!
Mr Knitsonya's Pomegranate Liqueur
Needs:
2-3 large pomegranates
2 cups (400 grms) sugar
2 cups (500 ml) 80 proof vodka
Large Bowl
Potato masher
Wooden spoon
Sieve
Large jar with lid
Funnel
Towel paper
Bottle with a stopper
In a large bowl, seed the pomegranates. Add sugar. Use a potato masher to juice the seeds. Continue until all the seeds are squished, then move on to using the back of a wooden spoon.
This takes a good 20 minutes and is very tedious. Add vodka and let the mixture steep for 4- 8 hours.
Using a sieve, pour the contents into a wide-mouth jar. Close jar and allow the contents to rest for 3-7 days.

Just look at all that sediment.
Place a funnel in the bottle of your choosing, then line the funnel with a paper towel sheet. Tamp down, then trim any parts that stick up above the edge of the funnel. A coffee filter will work, but will be much slower.
Pour and filter.
Many other berries, such as strawberries or raspberries work fine using this method. Add to prosecco or for something sweeter, add to 7-Up for a Shirley She's-Not-A-Kid-Anymore Temple. So, cheers, skål, prosit, slainte, kampai, l'chaim and Happy New Year!

wouldn't it be easier to gently, lightly cook the fruit and sugar (cranberry jelly process?)
the heat would burst the skins, (and melt sugar) and make a smoother syrup. from juice/sugar mixture.
it doesn't need cooking just a slow gentle heat-the cell walls on most plants would break long before boiling.
